  • 34 medium yellow onions, peeled and chopped

  • 2 garlic cloves, minced

  • 2 tbsp olive oil or vegan butter

  • 1 tbsp all-purpose flour (or cornstarch for gluten-free)

  • 1 cup vegetable broth or reserved onion water

  • Salt and black pepper, to taste

  • Optional: 1 tsp soy sauce, ½ tsp balsamic vinegar, fresh thyme

Instructions

  • Boil the onions: Add chopped onions to a pot of boiling water. Cook for 10–12 minutes until soft. Drain and set aside.

  • Sauté the base: In a skillet, heat olive oil. Add boiled onions and garlic. Cook 5–7 minutes until golden.

  • Thicken: Sprinkle in flour and stir continuously to form a roux.

  • Add liquid: Slowly pour in vegetable broth while whisking to avoid lumps. Simmer for 6–8 minutes.

  • Blend (optional): For a smooth texture, blend the mixture using an immersion blender.

 

  • Finish and season: Add salt, pepper, and optional flavor boosters. Simmer 2–3 more minutes. Serve warm.
