Air fryer lemon blueberry bread is a moist, golden loaf bursting with juicy blueberries and bright lemon zest — all baked to perfection in less time than a traditional oven.

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 3/4 cup milk or buttermilk
  • 1/2 cup vegetable oil or melted butter
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 1 cup fresh or frozen blueberries
  • 1 tbsp flour (for coating blueberries)

Instructions

  1. Preheat air fryer to 320°F (160°C).
  2. Lightly grease and line a small loaf pan that fits inside your air fryer basket.
  3. In a bowl, whisk together flour, baking powder, salt, and sugar.
  4. In a separate bowl, whisk eggs, milk, oil or melted butter, lemon juice, and lemon zest.
  5. Gradually fold dry ingredients into wet mixture until just combined.
  6. Toss blueberries with 1 tbsp flour, then gently fold into batter.
  7. Pour batter into loaf pan and smooth the top.
  8. Air fry for 25–35 minutes, checking at 25 minutes with a toothpick for doneness.
  9. If top browns too quickly, cover loosely with foil and continue baking.
  10. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For best results, do not thaw frozen blueberries before adding them to the batter. Drizzle with lemon glaze for extra flavor.
